Traditional royal icing recipes use raw egg whites. My nephew has a severe egg allergy, so we are always very careful about what ingredients we use in recipes during the holiday season.

Different vegan icing recipes call for a can of chickpeas or garbanzo beans or aquafaba. Other icing recipes use meringue powder for an egg white substitute. However, I love this vegan royal icing recipe that uses just 4 simple ingredients I already have in my pantry.

💭 Frequently Asked Questions

Here are some questions (and answers!) readers often ask about this simple vegan royal icing recipe.

What is royal icing made of?

Traditional royal icing is made of powdered sugar, eggs whites, and flavoring. Coloring the icing is optional.

What is the difference between royal icing and decorating icing?

Most icing is soft and creamy, but royal icing dries hard which makes it perfect for decorating.

How long does vegan royal icing last in the fridge?

Vegan royal icing lasts about 1 week in the refrigerator.

⭐ Tips

✔️Your first step should always be to sift the powdered sugar before mixing to remove any clumps. This will help create smooth icing.

✔️If you are using almond extract, be sure to use only ¼ teaspoon - a little bit goes a long way when it comes to almond extract!

✔️The consistency of the icing depends on how much liquid you add. For thinner icing, add more liquid.

✔️As with regular royal icing, you can use food coloring to mix up your icing. I love this set of gel food coloring because it doesn't add liquid so it doesn't change the desired consistency you worked so hard to achieve! However, double-check that you are using vegan food coloring if you have egg allergies.

📖 Variations

We recommend that you try our eggless royal icing recipe for the first time just as it is written for the best results, because that is how the recipe has been tested.

However, the next time you make it, you might consider one of these different ways of making this great recipe.

  • Use fresh lemon juice in place of the water or plant-based milk, and lemon zest instead of any extract. You can also do this with an orange.

🍴 Serving Suggestions

This easy recipe for royal icing is so versatile because depending on different consistencies, you can use it so many different ways!

Icing with a thick consistency is great for gingerbread houses and other 'construction' when you need two cookies to stick together.

Flood consistency is great for icing large areas of cookies, while a slightly stiffer texture is great for intricate details.

Then, when you add in different colors too, the sky is the limit!

What can I use instead of eggs in royal icing? ›

What makes royal icing harden faster? ›

Luckily, there are multiple ways that you can speed up the process. Leave your cookies to try at room temperature and expose them to as much airflow as possible. Why does royal icing need egg white? ›

Pasteurized Egg Whites: Provide the necessary structure and help the icing dry to a smooth, hard finish. If you'd like to avoid using raw eggs, feel free to use meringue powder, which is sold in the baking aisle of most large supermarkets or craft stores.

What does cream of tartar do to royal icing? ›

Using salt and acid (cream of tartar) balances the sugary sweetness. Silver rum adds a subtle flavor, without darkening the icing like vanilla. Creaming helps minimize the grit of powdered sugar.

What makes royal icing thicker? ›

The icing consistency can be adjusted at any stage of the decorating process simply by stirring in sifted powdered sugar to thicken, or water to thin. Remember, at this stage, it is important to gently stir in (not whip on the mixer) any additional water.

Can cream of tartar replace meringue powder? ›

Cream of tartar is a stabilizer and is sometimes used in making meringue to keep the eggs from collapsing. Some meringue powder already has cream of tartar in it to help in stabilizing meringue. So you can't use cream of tartar as a substitute for meringue powder, but it can be used to stabilize meringue recipes.

What stops royal icing going hard? ›

The corn syrup is an ingredient that is usually mentioned as optional in classic royal icing recipes. It adds a little gloss and elasticity to the icing. The glycerin is the not-so-secret ingredient that keeps the icing from being rock hard. You can find it in the baking section at craft stores or online.

What are the three types of royal icing? ›

There are three main types of royal icing: stiff consistency, piping consistency, and flood consistency. They are used for different decorating techniques, although sometimes you can use different consistencies to achieve the same result.

How to make royal icing shiny when dry? ›

One of the main keys to shiny icing is getting that icing to dry quickly. The faster the icing dries, the shinier it will be. One simple method to faster drying is to just aim a fan at your drying cookies. I like to aim the airflow so that it passes evenly over my cookie sheet, not directly down at a particular cookie.

What do bakers use instead of eggs? ›

Substitutes like vinegar and baking soda, plain yogurt or buttermilk can help keep cake light, airy and structurally sound. Replace each egg with 1 teaspoon of baking soda combined with 1 tablespoon of vinegar, ¼ cup of plain yogurt or ¼ cup of buttermilk.

What happens if you put yolk in royal icing? ›

The effect of adding an egg yolk to it will be having the meringue not whip up properly. The fat of the egg yolk will ruin it. Instead of beautiful white peaks you will have a foamy mess. For a beautiful meringue use clean equipment, room temperature eggs-whites only, sugar, and beat as much air into them as possible.

  • Find a recipe that is eggless. It's easy and tastes just as good!
  • Use pasteurized shell eggs or pasteurized egg substitutes in recipes calling for raw eggs.
